To delay ripening of mature green tomatoes store at 55-60 degrees F/13-16 degrees C. Tomatoes are very responsive to cold temperatures and should not be stored at less than 50 degrees F/10 degrees C. If ripe tomatoes must be conserved in refrigerators, put them in covered boxes; keep unripe tomatoes far from the sun light. Handle with care as tomatoes are extremely delicate. Do not drop shipping containers on the floor. Store and display tomatoes with stem upward to help preserving the quality.
